How different is Case's carbon steel vs the CV?

I've had about 95% success with Case's steels, both CV, CS, and TruSharp. I've been able to get very useable edges on all of them. I've only had one... maybe two that I just could not seem to get a decent edge on.... probably due to uncertain heat treat.
Most likely due to RA (retained Austenite). Which could be the heat treat or the composition. 1095 and similar carbon steels are not held to the strict standards that some modern steels are when it comes to exact composition and impurities. It becomes practically a guess as to whether or not they’ve been hardened enough or all the way through. There’s a reason many case knives don’t hold an edge and are rarely very sharp. Now that doesn’t mean all 1095 is bad, but just that it’s more of a crapshoot than certain other steels are. That’s just something I wouldn’t want to pay much money for.
 
People are really in here saying stainless steel doesn’t do what they need a knife to do? In this decade? Wow. Tell me you’ve never had a decent stainless steel or a diamond sharpening stone without actually telling me that ✅ What a joke. 20cv for example is in no way the king of stainless steels, but it is a good one. And with a proper heat treat and temper the performance absolutely blows 1095, 1085, 1066, you name it out of the water. And with the diamond stone it isn’t any harder to sharpen either. Might take a couple extra swipes but I just fail to see how that could inconvenience anyone to the point of bad mouthing modern stainless steel. Idiots 😂
