How long does it take you to grind your bevels?

Grinding/removing the steel is easy and fast. What takes time is getting both sides even, especially at the plunge line. When I look at the edge from the bottom up, it has to be as perfectly centered as I can and the plunge has to match up on both sides. With this I have to go slow which is why I take a long time. Profiling and grinding a big bowie with a false top edge can take me about 2 hrs.
