How sharp can a SAK be?

I recently started carrying an SAK again and have discovered that they come sharp enough and can be made sharp enough to cut your hand without even feeling it. Yikes!

I can get my SAKs very sharp or as sharp as I want. The thing about SAKs is that they sharpen easily, but the edge does not last a long time with use.

True, but the stay sharp long enough. I've started gently convexing the pen blades on a couple SAKs I have, and they are incredible little scalpels. Only for delicate stuff, and I do the main blades with a bit tougher edge. But then again, I very rarely use any knife enough to fully take the edge off it. I sharpen more out of boredom than dullness.

I have been able to get my SAKs sharper than any other knife I have ever owned. They are so sharp that merely touching a package, or envelope, or whatever with the edge causes it to split instantly. I can easily shave hair after a few minutes on a Sharpmaker, and when they get dull I just strop and it all comes back.

Which stones on the SM do you use?

When I first get a new SAK I start with the standard dark grey coarse until I feel a burr, then go to fine, and then finish with very light strokes on ultra fine, then a light stropping. I end up with scary sharp edges. I do 30 degrees for both blades, and leave the pen blade at 30, but follow up the main blade with 40 degrees to make a micro-bevel.
