How sharp is sharp?

Since we're kinda on the topic of sharpness... I have a question of opinions after reading some of the sharpening FAQ (hope it's not addressed later in the FAQ, beyond where I've read). Anyway, my question is this: If you are carrying a knife simply for use as a last ditch self defense (and plan on using a mostly slashing defense) would it be better to stick with the "coarser" stones, and the "micro-serrated" edge, as opposed to the polished edge? The sharpening FAQ mentions that the m-s edge is better for slicing type cuts (slashing defense?). But, then it also says that the polished edge will work better for things like "skinning a deer." While I don't plan on filleting anybody :0 , wouldn't the skinning part be similar to a slashing defense?
