Schrade Sharpfinger.

Don't get one of the new ones, get an older Schrade USA version. They're awesome.
 
The Sharpfinger was my first hunting knife as a kid. I can't tell you how many rabbits, squirrels, possums and coons I skinned with that blade. I trapped and sold the skins. Brings back good memories.
 
I'm a deer hunter and hunting knife guy. I like every knife shown and mentioned in this thread! I hunt in Minnesota cold and prefer rubber grips. I like a 4" or so drop point blade. It's very hard to beat the Buck Vanguard's design.

I've had this Sog Swing Blade now for a while, and can tell you it works! We used it while cleaning deer, and after 2 deer each cleaning; there darn near was a fight on who got to use it next. In comparison, the 2 buck knives we had that did the same work had to be sharpened twice yet the sog stayed razor sharp. I know it isn't a super expensive knife; but trust me when I tell you ... you will appreciate it! Hell, for $26 how can you go wrong??! It comes with a sheath too

Don't discount anything from the Dozier line either just because it's D2. Their website lists a long wait time but you can buy knives immediately through several secondary sales sites for a minor markup. Even though you list salt as an issue being near the coast, wipe the blade with a little oil just like you would any gun barrel (make it food safe though like mineral oil). It takes very little time to prevent any corrosion from happening.

Agreed. He works with a variety of steels and a variety of patterns to suit whatever shape or size you might be looking for. Give him a ring.
 
If it's in your budget go custom. Ingram and Dozier both make great knives specially designed for hunting, each with decades of experience. Their knives might take an extra measure of care, but you get real performance in return. A quick search of their authorized dealers should provide a decent selection with no wait, but you will pay extra for the dealer's services. For example, A.G. Russell has these in stock right now:

 
Last Fall we butchered 2 deer with a Bark River Bravo 1 and a Gunny! Awesome knives for the job! I do have a Dozier Yukon skinner on its way and im pretty sure its going to take the place of my lead hunting knife! Id think you'll be more then happy with just about anything from Bark River or Dozier.
