Ok, it's been a tough year. I had a full Achilles rupture while hiking and didn't have insurance. I'm an independant contractor. I couldn't eat or workout the way I used to. Trader Joes has been a huge help as I shifted to salads and veggie burgers. However!! I used to do temp work as a chef and still have some contacts.
Anyway, right now is past the end of the Italian white truffle season and what's left in the city (NYC) needs to be used asap and I was offered this beautiful white truffle for almost $3 a gram but had to use it right away. This kind of meal was a regular occurrence (without the truffle) for a decade or two, but I've reduced and reformed for health, money, and the environment, yet, once in a while it's soooo good to go back!..
