I think I would want at least one of the knives from their world. Presuming I could hold it and use it. (there may be a significant difference of hand size, structure, and strength.)

I've got some knives with sentimental value that I can't just go out and replace and even the ones I could just wouldn't be the same.

The premise includes aliens with the technology to cross interstellar space and swipe my knives. The first question is "why". Perhaps a species that spends time and energy on developing and carrying personal EDC gear is a novelty for them. Maybe our diverse designs are hot items on the home world. I can think of cross-cultural human examples of this... Maybe their people had different needs or their technology took a different route. Whatever the case, an injection of alien technology could do wonders for the development of our gear.
