With a coarse stone, I can hog off metal when reprofiling or repairing damage with full depth cuts, and can get a fairly fine edge with feather light finishing strokes and micro depth cuts.
With finer stones, I'm severely limited how fast metal is removed, and how coarse an edge I finish with.
I can always find something to further refine the edge some, like bare denim/leather/wood etc.
I can end up with about any edge possible with only a coarse eze lap diamond stone, with any blade steel, except a comfortable face shaving one.
