Vic Outrider. Locking blade, saw, scissors.

outdoor knife... my Benchmade 722 that has served me well for about 10 years now.

This last weekend it was a SAK OHT...and a Spyderco JD Smith. That Spyderco cleaned four trout with no problems whatsoever.

Probably a Spyderco Military or Paramilitary. Also the SERE 2000, though I've never seen one in person, has always looked impressive to me.

Lots of good folders for the outdoors. Specific choice depends on what kind of outdoors. Spyderco Military is a good all-around choice. Slipjoints like the stockman and trapper patterns have been popular and effective for a long time.

Spyderco Military. It's a helluva bushcrafter.

Not including multitools and SAK's, I'd pick the Spyderco Military.

I'll echo these sentiments. Full flat grind, nice point, open construction, good lock, great ergos, light, made of premium materials, and Spyderco quality add up to a great outdoor folder. It may not be as overly built as some others, but is plenty tough for what you would need a folder for. It's awesome at slicing, game/fish processing and food prep, and the G-10 is grippy even covered in fish goo. The blade size and grind make for easy rough woodworking, though it is not the carver a stockman would be. I've gotten to where I prefer it to my Sebenza for messy outdoor stuff.

If I had to pick -one- outdoors folder? I would choose the SAK Farmer, hands down. I've carried mine all over from Florida's swamps to the big falls in upper New York. It's just a simple, good, affordable, multi-use blade that is easy to maintain, and invaluable in a tight spot.

Yesterday I received my new Buck 450RD Protege. A good, strong and very light folding knife that did surprise me and which I will try out this summer during camping and hiking. I also like the folders of the Swedish company EKA Knivar. My old Swede 60 with plastic handle has a nice big and thick blade, I like it a lot.
I have two Ekas, good little knives!
Watched Ray Mears Walkabout series this week, he was using a small Eka folder in at least one of the episodes. That in itself is a great endorsement!

Of the knives i own I'd go with the new Vic Spirit with the spear-point blade and scissors.
(recently modded my butter-knife bladed Spirit to a spear-point).
Or if you couldn't take a multi-tool/SAK then take a Case large Stockman or Buck 110/112.
For one handed opening i would go with the Spyderco Tenacious.

Only one , thats hard .

I have a tendency to use different folders all the time , so for today, I would say BM TSEK axis .

I won't suggest a model, but I will suggest features...

1) Locking. If one has to use this knife in a stressful situation, or if one just wants to avoid a trip-killing accident, get a knife that locks open.

2) Comfortable Handle. Same circumstances, a comfortable handle that does not cause fatigue or hot spots will be very appreciated. Think boring. Fancy handles with lots of shapes and textures usually are not comfortable long term, they are made to look good. Boring handles, usually, feel a lot better. Of course, there are those who think comfortable handles look good, but they are the minority.

3) Acute Point. One need to have one knife that can make delicate small cuts in tight places etc....

4) Easilty re-sharpened. This is a personal preference, but I think that a woods knife needs to be easily resharpened. What good is a super steel if you can't resharpen it? Are you going to take your super sharpening set up with you? Some people are amazing sharpeners, but they are the minority.
