If you were to go to war today, which knife would you take with you?

precisely what I would have taken from 1975 to 2005, had I hadn't been given an unwanted by me forever (honorable) medical discharge when I reported for Basic Training:

The "Demo Knife"/"G.I. Utility Knife" I was issued by the Army Reserves, before I went to Basic and received that daRn discharge. I still have it.

(I wanted 30 years ... it took 12 days to process the discharge paperwork. I never got past the reception center at Ft. Jackson. for basic :( )

A knife is not on my list of "weapons". Never has been; Never will be.

I don’t know if you’ve ever been thanked for your service. So I wanted to make sure I thanked you. You were ready and willing to go. They didn’t let you but that is not your fault.

Thank you sir, for you willingness to serve my country. My family and I sincerely appreciate it. I also was told I could not serve but did not make it as far as you did.

That's right. A number of key practical considerations. You probably wouldn't want to use your Loveless heirloom to pry something open.
 
If it was a war, I'd have to go as a volunteer, too old, slow, and beat-up these days. Of knives I own, probably a SOG S1 for cutting stuff, at .280" the blade should be plenty tough. Also, a 2Hawks Warbeast tomahawk for destroying anything that needs more than just cut. As a bonus, in a field kitchen, a tomahawk makes a more-than-acceptable ulu for food prep, and an army marches on its stomach!! A multi-tool of some configuration should be considered essential, non-optional gear for field-ops, I'm just looking at dedicated cutting tools.

Cold Steel GI Tanto one for every guy in my unit and a few spares, a Leatherman Wave and a Spyderco Tenacious. I would rather carry my Busse Combat Team Gemini Light Brigade but I wouldn't want it to grow legs and for the same price I could outfit everyone in my unit with a durable dependable GI tanto and a cheap folder.
 
I want to say a kabar or bk7, but I think the cold steel srk probably fits the bill better. Lighter, able to do some rough tasks, cuts well.

As for a folder... I'd want to take a Shaman, but a multitool would probably be a better option.
 
It would probably be a toss up between my Greg Covington SOG replica or the kabar style knife I have from the same maker. Either would have made me very happy back in 68 through late 70. But I would still have a Swiss Army in my pocket and probably a Spyderco clipped to my gear someplace for everyday utility.
 
Carbon Opinel N°10. A SOG Paratool and a pair of EMT/veterinary shears on the side.

And I hope any war I get involved in has me keeping my current occupation as a horse trainer.

Although my sheath for the 'Coot sucks so might need to grab my Koyote Sgian Dubh which is an awesome knife and has a great sheath.

Well, there's a Spyderco Pacific Salt in the survival vest, and some type of fixed blade similar to the Ontario Air Force Survival knife in the seat pan survival kit. Those are both issued items, so I guess they wouldn't count for this scenario, and I supplement them with a Leatherman Signal. Maybe I'd get a compact fixed blade with an overall length of ~8 inches, since the old survival knives are notorious for breaking where the tang narrows down at the handle.

You may laugh at my tactical onesie, but I'm the one who's comfortable at work!
 
If they are asking me to re-up and go to war again, they've reached the bottom of the barrel.

If I gotta go back though, I guess it will be a Leatherman MUT to keep my weapon going strong.
