Love Wegman's......wish we had those in Atlanta.

They are working their way down there. I went to school at RIT in Rochester, NY which the home of Wegmans. I never thought a grocery store could be something that I would really miss, but when I moved to the DC area I really did miss it. Fast forward a few years and I now have 3 of them near to where I live. Slowly but surely, they are taking over.
 
Out of the brine. Dark in color due to the molasses in the brine.


Rubbed and onto the smoker (early in the morning).


Bark forming nicely.


Spritzed with apple juice. Now time to wrap and put back on the grill for a few more hours.
 
I n very thought to wet brine one. I've marinated but never did a full submersion. I'm gonna have to experiment with that.

I did this one a week ago, turned out really good (I have yet to find a brisket on PR). I've got a lot of time on my hands so I've been experimenting with the smoker a lot. Next is my own BBQ sauce

Pulled it off the smoker at 200 degrees internal temperature. I then put it on the counter to let it sit and rest for a little over 60 minutes. After removing the foil it had a pretty perfect fat cap split, and the bone was lose, exactly by the book!


Here is how it looks after pulling. It's tough to tell from the pic, but it's very moist and tender. Quite delicious! Had some for dinner and put the rest in a vacuum sealed bag and into the freezer for us to have Friday for dinner.
 
Well, some folk took sick and the event got called. But I can still sit by a fire, drink some bourbon, and smoke a cigar, just the same. Missing the company of Ben and Brandon

Missing your company too Guy! It's a bummer that Brandon and his GF got the flu, and ZA had to work, but we'll get the group together again soon.

I spent the night in my hammock in my back yard last night because I wanted to test out my new underquilt. It got down to 33 degrees and I was warm and comfortable, and I'm confident I'd be comfortable at a fair bit lower temperature as well. I'm actually headed out to the WV land tomorrow with the wife and kids, so at least I'll get to spend a day out there this weekend. I might try to do a little BG WTF vs MOAB chopping comparison.
 
You hammock people are hard core.

We are finally getting back to functional.... The flu sucks ass. I can't in good conscience recommend it. I can't wait to get another date to look forward to... Since Weds of last week I've been a walking cold chill.
