Wow, thanks so much Tim and Mike. Personally, I also like the look of the more raw looking Infi, as opposed to the satin, just because of how easy it is to scratch it when you use it. You guys really really answered all of my questions on the subject. Thanks to both of you for taking the time to really explain the details.

That does look sweet Mike! I just picked up a used edge pro this week and it works great. It gives you those pretty edges (unnecessary bonus for me) that are VERY sharp and well worth the money for the time it saves. Paper is easy to push cut now.

I used the green mark on the BOSS Jack which was my test subject.

Tim, that edge looks great. I've never been much for guided systems like the EP for various reasons, but it works GREAT for a lot of people. I think the main reason is I favor convex edges and I have the attention span of a new born. I've sharpened using pretty much every method, from DMT diamond stones, to the EP to the sharpmaker to Japanese water stones. The method I found to work the best for me is definitely a belt grinder. The room for error is bigger than any other method, but I'm very impatient, way too impatient for any other method besides power sharpening! In the end, a sharp knife is a sharp knife.
 
Well, I was completely prepared to believe that Mike had, in fact, destroyed his B11.

Great work, and great tips here. I will strip my B11, so I might steal with pride the techniques listed here for the flat grind.
