There is a knife store in Venice between Rialto Bridge and Piazza San Marco. Im not sure of the street name I just remember following the rest of the tourists and stumbling onto it. They had a good selection but it was a bit pricy. If you're going to Maniago there is a great shop there called L'Antica Coltelleria Tavella. It's on Via Roma just up the street from the main piazza. They carry the whole range of Fox knives as well as Maserin, Chris Reeve, Spyderco, Victorinox and others and everything from folders to swords and kitchen knives. The lady that works there is very friendly (and patient, she stood there with me for an hour letting me try all the knives), she even tought my wife how to make ravioli.
Have a good trip, I wish I was going. Italy is my favorite place.
I forgot to add. The Italians don't seem to care too much about what knife you carry. Just no switchblades or knives with a blade longer than the width of you hand. Sounds rediculous but my boss there was a former Carabinieri officer and that's what he told me. I carried a Benchmade Presidio and didn't have any trouble. Just don't get into any trouble and you should be fine.
