Just Bought a Huge Hunk O' Leather. What Am I Looking At?

No problem RS2. Practice on scrap pieces to ge your setup right.
I like Cody's approach with the awl in the drill press, makes a lot of sense (especially the angling tip).
ALso don't sew or stitch wet, make sure the leather is completely dry.
 
Just so you know:
Leather stretches from the back to the belly and not from the head to the tail.
(a pregnant cow gets a fuller belly doesn’t grow longer)
Keep that in mind when cutting out belts and sheets.
Good leather shoe soles will only stretch lengthwise not to the sides. (keeping form)

Very critical if you are thinking about doing any tooling or carving.
Firmer the leather the less it will distort when working.
