Kitchen knife help?

Well, here it is, almost finished, just missing a final edge, maybe a little more handle polishing to get the figure to really 'pop'. With my limited available resources I've got a dremel attatchment set with felt wheels/wool polishing wheel and the polishing compound that came with the kit (red in color) and I also thought of toothpaste (any suggestions?)

Specs:
~400 layers 1095/15N20 heat treated by Dave Lisch (Thanks Dave!!!)
Blade length 8" from heel to tip
Handle length 4 7/8"
Handle butt ~ 1 1/16"
Maple burl treated by K&G and Ebony

I would probably just sand with a backer up to 2500 or so then light hand buff...some woods I think look and feel better at more like 800-1000 grit

Thanks Tim. It's actually sanded to 5000 grit then buffed using a dry dremel buffing wheel.
The color looks better when wet, though.
