I've never had it happen with low alloy stainless either but S30V S90V elmax and others that (correct me if I'm wrong) have a high percentage of carbon are the blades it seems to happen most with. Try re-touching on the EF stone with almost no pressure the next day then strop, it should help.
When it gets down below the 1200 grit I think the variables from the larger "teeth" play a larger role. Haven't tested that yet though so its nothing more than a educated guess
Some of these class steels have higher carbon than the white and blue HC steels ( and in the case of super blue "HC alloys". White steel is about as high carbon, pure, clean steel as there is made anywhere. It's amazing stuff, but no question a niche product. It does the "dark sider" thing as well or better than anything else and is the steel used to separate layers of flesh in sushi without damaging or bruising adjacent layers. It's, in it's pure form not really a beginners steel.
Super blue has a tiny bit better corrosion resistance and better wear resistance due to the addition of smal amounts of Moly, Vanadium, and a healthy dose of tungsten ( 2.5% ).
I agree that at a point ( below 1200 grit we'll say for lack of test data) the larger teeth and ragged edges ( in comparison

) are probably the reason a mirrored knife such as yours, or Jim Ankerson's don't show the same traits, at least not nearly as quickly.
I do typically just "freshen " up the edge when this happens, not completely resharpen it.

'm not sure that manual sharpening by some of the masters i've seen on the forum can be surpassed by the edge pro. many of us are'nt nimble enough & have the eyes to out perform sharpening aids. i know that i benefit from the edge pros & early belt driven lo- rays
I agree Dennis. I've been carrying, maintaining and sharpening by hand for around 40 years now having grown up on a family farm and having real jobs starting at 13. I can make the type of edge that I want depending on the steel type, hardness and jobs expected to be performed. Despite this my edges sure don't look as good as Jim's, or Knifenut1013. As long as it gets the job done I'm happy.
