I've often wondered about the personal steak knives (for example, shun); if glass or ceramic dulls a knife quickly and badly (so it is said and I believe), why pay $100 for a knife to do that very thing with. Not criticizing, really curious.

None of mine pictured are anywhere near the $100 mark. A touch up on the SM and they're all ready for the next steak or bird. That Companion 2/0 is a real beast at the Outback!
 
cf1969, I wasn't referring to your specific knives, I understand (and have done it) using various knives to cut steak; I really, honestly question buying the expensive gentlemans steak knife. Does it quickly dull? Is it fun or an affectation?
