I avoid knives made in China, but to be honest many of those don't appeal to me anyway. The whole "Oh this Titanium knife on bearings is so smooth and so great that it would cost twice as much if it were made elsewhere" argument just doesn't resonate with me. I'm of the mindset that once you get into that price range you're paying for more than the sum of the materials, and moreover I think once you get into that price range if you can't afford the more expensive one you can't afford a $300 one in the first place. I've personally yet to see a Chinese knife that wows me to the extent that I want it more than any of the high end US manufacturers. I have been intrigued by some though, and I am always disappointed (though no longer surprised) when I investigate the country of origin. No offense to those who enjoy them however, just not my jam.
Bark River Knives is one that comes to mind. I see them and I want to like them, and I think they would serve my uses well; but after the shadiness I've heard about them here I must choose to go elsewhere with my money.
For the most part, however, my reasoning for not buying some knives that I truly like is because I no longer feel the need to HAVE every knife that I like anymore. I'm pretty content with what I do have, and I'm also able to admire some of them from afar whereas in the past I would feel a burning need to own them all. Part of it comes from my change in financial perspective from maintaining residences on opposite ends of the country at the same time, and the fact that by this time next year I will have three (!!!) college aged children, but it's not really about lack of funds. I'm just finally able to find enjoyment from more than just purchasing "all the knives". I enjoy tinkering with them, doing minor customizations, just researching them, finding the ones that I REALLY like and getting those, etc.; and I've also come to the realization that something like a new SAK can bring me the same enjoyment as a more expensive purchase... All that being said, I reserve the right (and also know it is inevitable at some point) to have fits of buying from time to time
