Benchmade 710 comes to mind as an outstanding recurved blade that is not too difficult to sharpen. One of the best balances between weight, length, slicing, and slimness on the market!

Couldn't agree more, the 710 has to be one of the all time best production folder designs. Axis lock ease of use, flicks open but locks strong, and so much blade in so small a package. Great knife.
 
Sounds like a Benchmade 710 would be a good choice, if budget allows, you can go for the Emerson Commander seires.
 
I love my Ontario Jerry Hossom Retribution 1. I think it's beautiful.
I second that. Jerry Hossom has some truly epic designs.

You can't go wrong with a ZT 0200, and if you can find one, get a Scrapyard Yard Hook/Keeper (depending if you want the top guard). They're wicked.
