A thin filet that has some flex but is not wimpy. I know that some folks prefer their boning knives rigid but I have used my own filet knife to butcher and bone out wild game with good results.
I forged this with 135 layers of 15N20 and 1084 high carbon steels with a slight convex grind
I heat treated this to a hardness of Rc 58-60 with attention to a fine grain throughout the blade
The stabilize walnut handle has a subtle curl and is sculpted somewhat flat for the last two fingers for comfort and to index the blade when cutting
Overall length is 12 1/4 inches with a 7 1/4 inch blade
I have included a leather scabbard in case you want to take it fishing
