Forward curving, about 6" long, and four of them, one for each finger. I'd attach them to an articulating leather and metal glove so they could be used individually and allow normal finger motion and slashing.

My typical method is 2x what it is a day before it closes. That's usually pretty close on things that are under $100, but no idea if it holds for big ticket items.

Zwilling Kramer Carbon 2.0 5-inch Boning Knife: 64 HRC

Correction:

The Zwilling Kramer series doesn't have a Boning knife. The series comes in two flavors: either (1) in 52100 (61 HRC) or (2) in Damascus (SG2 core, HRC 62 - 64). In the 5" range, it appears to only include a utility knife, but no boning knife. The reviewer (AI?) that I took my information from (Best Zwilling J.A. Henckels Boning Knives 2025 Review) might have thought that the utility knife might be useful for de-boning?



Who knows...

The cheaper dedicated Zwilling boning knives are indeed lower HRC.
