Usually not as much as people would think is enough when moving a bit.
This is what my 3 year old daughter wears up in the mountains:
I wear something like it:
Thin polypro or wool undershirt, if it is extremely cold a second thin wool over that and then a cotton anorak, softshell or Gore-tex jacket (cold and wet).
I wear a down jacket if staying still for a long time. Most people put on way to much and get sweaty and then cold.
This is a few degrees below freezing and I'm wearing thin polypro, cotton anorak and Marmot ski pants. Pretty happy camper
