Hey guys and gals is Amy doing a convex edge on her knives ? With my uneducated eyes it’s really hard to tell . If not what degree are you guys sharpening at ?

Here’s what I know direct from Amy. The bevels are flat, the cutting edge is sharpened on a slack belt so it would technically be a convex. But the edge is so thin that the curve on the secondary bevel is microscopic at best.
