Looking for best slicer pocket knife

I love Opinels and use them for cleaning small game and fish all the time. They are super slicey. That said, I can't see one being my first choice for field dressing a deer unless it was all I had. I don't think moisture from water or blood is of much concern in my experience. For myself, I would not feel overly confident that I could not manage to rotate the lock with my fingers and potentially have the blade close on me while working around some of the harder cuts near bones or cartilage. Once the collar around the blade on an Opinel is unlocked, the blade is pretty much free to close on you. Even a slip joint knife will have some resistance to closing and would probably be a better choice. Frankly, I would use a fixed blade for that job. Since the challenge is to suggest a folder, I would have to go with a lockback folder.
 
Personally I think a rat 1 or 2 would be very good. Not the MOST expensive knives but excellent tools. If you are like me,sometimes I'll lay something down in the woods and never miss it. A rat would be easier to take losing than a 200 dollar or more knife.

Anything FFG by Spyderco will slice the crap out of anything....Oh wait NVM. To each his own
 
Wait PLEASE Before you ignore my post. Look I know you said NO Spydie but I have one Major exception and then I'll list other. If you want a pocket knife there Is no better production blade IMHO and MANY MANY other hunters than the K2. Always there Fixed Blades that you can pocket i.e. the Bark River Scalpel II (2) in Elmax. Depending on the size of the deer (southern white tail can be dressed completely with this blade w/o a touch up if your not picky with the edge 90% through.....hit no bones and you can go all the way) you could get it all dressed or just have to strop once or twice depending on the circumstances. I don't think there is a knife out there that will compete with the K2 except Maxamet and ZT's in maxamet are close enough to midtechs or customer. You might do well with an up swept ZT in 20cv like the Dimitry 0462 but I have no experience in folding ZT knives one fixed blade only ever bc they're too thick to me bit they do seem to be getting a bit thinner lately). Anyhow if you're interested in Fixed Blades like the two Phil Wilson's (not for sale but for info and possibly how to procure one) or even something like the super thin CPM 10v by Chris Berry @ .065 mm then PM me I do have other suggestions and ways that you can upgrade Spydies to close to a midtechs level and if you want to get a regrind they will be everything a midtechs represents minus the fact they are a production blade but people put hardened steel lock bars to custom scales/ custom grind the blade/ change pocket clips and even put in new titanium liners. All that done and it is a new knife as in a midtech.
