www.toolshop.de (also has an English language option) It has a very, very good reputation and I ordered there several times without any hassles myself.
http://www.wolfster.de/ is also a great shop but he doesn't have language options beside German unfortunately.

And I'd vote for The knifecenter too, it doesn't matter where it's located.
Shipping is so fast that they might as well have been situated next door.
Also www.knifeshop.com (Austria) has a good selection, albeit stiffer prices than US webshops.
