I find that I use the pliers and screwdriver tools just as often as my knife in most situations.

Same. If I am heading out the door where I need to pair down from all the crap I typically carry, a Leatherman is the first thing I grab before anything else.

It gives me way more options to complete a task.

There was a time when I packed a folder, tool, fixed, pistol, spare mag, etc. Man, I've just surrendered myself to the fact that I can't be ready for everything and was becoming a slave to my stuff and "what if?!" where I would have so much gear and whatnot making me literally 5lb heavier.

These days, it's a Leatherman P4. If I'm going to work, I carry a large locking folder for real cutting jobs to go in my primary pocket. That's about it. My back thanks me for it
 
My Victorinox classic is always on my keys, so I can't leave home without at least that. For a dedicated cutter, an Opinel number 5 or my old small Sardinian Resolza is in a pocket. The Resolza is almost the same size as my Opinel number 5, and it slices most things I need to cut.

If I need more blades than that, then I go to my old Buck 102 woodsman. Thats about it; for walking around in modern suburbia, a 2 inch friction folder is used, but then my backup is a Buck fixed blade. I find that past the small 5th pocket size, I'd rather have the fixed blade anyways.

Were I to pare down to absolute bare minimum, I'd go with the vic pioneer, knipex pliers, and a flashlight. My current light is one of the older Fenix e12s, but any quality single aa light would suffice.

That's for in my pockets carry. My bag is an entirely different story. There's a few things in there I could stand to take out, but stuff like my weego boost pack, adjustable wrench, and needle nose pliers have saved my bacon too many times to not have.
