Just switch sides from one session to another. You don't need to take notes or anything, just do a quick visual and if you note one side is more narrow do that one first.If you sharpen a V ground blade like you said too often on the same side ...
It isn't when you have to sharpen, but just sharpening in general. You want to design knives so that sharpening time is minimized, both in terms of raising the cutting ability and ease of material removal when it has to be done.And regarding knives getting dull during a job, I still don´t see it as a problem.
