So the ones you bought are the wooden handled ones? For kitchen use let me recommend the blue plastic handled 546. They are stainless and have the same tang configuration as the carbon 510/511. It's the bottom knife in the X-ray image. The only difference between the 510/511 and 545/546 is the presence of the finger guard.
