As far as people who make or made knives or lent their names to knives who many card carrying members of the general public actually associate their names with their knives? Jim Bowie and Bo Randall may be it. I suspect that people who have heard of Randall may not know Bo's first name, just that "some guy named Randall" made those. Perhaps Al Mar assuming that people know that the name of the knife company was his actual name. How many who people actually own their knives know of Pete Gerber or any specific member of the Buck family? How about Uncle Henry Baer? Same with Cold Steel or Sypderco. How many people actually know Sal Glesser's or Lynn Thompson's (despite his best efforts) names? How many people realize that they are carrying a Bob Loveless style knife when they go deer hunting?
 
I like to think outside the box. I think the most well known (popular?) person in the knife industry is Zac Brown. Granted he is not specifically known for his knives but he is generally more well known than all the other knife makers listed. His company makes some very nice knives as well.
 
Sal Glesser has done a great job with Spyderco and is a resourceful & congenial presence on forums.

Gianni Pauletta has led LionSteel to great heights with some great high-quality designs.

Thomas Welk has done a tremendous job with KAI and specially all the high-quality ZT leading edge designs and marketing.

Chris Reeve who consistently makes the highest quality knives.

Eugene Solomonik of Olamic Cutlery who not only makes high-quality unique takes of each model but gives the best customer service I've ever encountered.
 
I'm very new to this knife collecting thing but the most famous I've known for years long, long, long before my interest was Randall. And only because I would drive by there shop constantly for years on highway 441 and finally did a internet search about them.
