Murray Carter kitchen knife collaboration

I saw a deal on the 9.5 Super Blue Gyuto that was MUCH too good to pass up, so I now have one on the way (with free two day shipping to boot)!

I'm super excited... It should pair well with my 7" Kramer/Zwilling 52100 Santoku. :D

Anyone have one of these already? I'd love to hear some feedback!

I held them at Blade West. They all seem nice. the Thin stock just like Carter's custom knives. The one thing I didn't like is the balance on a few knives was further back than I prefer. The 10 in Chef's is very nice, as is the 7.75". The Funayiki (~6"?) is fantastic. I have a similar knife from Carter that is probably my most used kitchen knife. The Nikiri and the paring knife don't do much for me. Nothing wrong with them - I'm not a Nikiiri guy.

A little bit of a bummer today... The knife shop accidentally sent me the 7.5" Bunka Bocho instead of the 9.5" Gyuto I ordered.

On the plus side, they were super easy to work with and the exchange should happen really quickly.

So far the Bunka seems (can't use it obviously, lol) like a phenomenal kitchen knife! Like really phenomenal! Super, super thin behind the edge with a perfect distal taper. It has a great area to choke up on behind the blade and a fantastic handle (I was originally worried the handle would be too big for my small hands). Fit and finish is divine.

I can already tell that the Gyuto will likely be my daily driver and will be kicking some knives out of the kitchen.

It’s very thin behind the edge.

I’ll break out the calipers tomorrow and get you an exact measurement.

I got stuck at work a bit late tonight so I'll get some better pics and more accurate measurements tomorrow. So far I'm loving the Gyuto. It's the perfect length and has a very nice, balanced, lightweight feel to it.

*edit
It's actually thinner than the measurements I posted. I'm getting .48mm in the rear and .40mm towards the tip.

Here's pics of those measurements. It was difficult to hold everything by myself the first time around so the measurements weren't as accurate. I had some help from the wife this time so these ones should be good, lol.

I'm getting .48mm towards to rear.
