There is more to performance than edge-holding... There is also, you know... Geometry and cutting stuff... And ease of sharpening...
Given that a Sebenza in S35V dulls rapidly in cardboard, or twists its edge sideways while cutting rope (look up JDavis882 for that debacle), I really,
really doubt 8CrMov13 is that far behind: Therefore, at worst, it does hold an edge like an expensive knife... Given the present case, I would be quite bummed if it did not do at least a
little better... More than likely, the difference will be hard to impossible to tell, as it is in most cases that don't involve chopping...
