How 'bout going wild a little and not using a direct knife term (some do sound cheesy when you think about it). Car cos. don't use Wheel-Tech or Bumper-Corp, so...

Three choices
1) SIMPLICITY (knives)
2) OUROBOROS (with a cool snake-circle logo)
3) RLR Knives (and my royalty fee is real cheap!)

Based on my experience with you, I would suggest;

"Reliable Knives or Cutlery"

This makes a statement about you and your products. Not too flashy (to say the least), but a little different.

Well, if this is going to be an internet store, and if you're smart, you would name your place simply "The Knife Store". That would insure that ANYONE that did a search "knife store" would come up with your place first.

Now if you were me, read stupid, you would name it something cool like, The Great Knife-off of the South...or The "Tool" Emporium, I SAID TOOL!...or STUFF...or Steel 'o Dan's...or BladeForums.org...or Alien Keys Inc...or you could adopt a symbol like Prince, something like ~/. Again, this is only if you were stupid...uh I mean cool, like me.
