As weird as it sounds, me and some friends decided to buy a full pig or cow and no one wants to eat the head, well, me and some friends are going too. Brain and all. I don't know which knife would be good for cutting through bone.....may-be a braud endless list.

braised beef cheek is one of the best cuts IMO

and braised pig head...yum

you shouldnt need to cut through the bone, just find a joint.

As mentioned a knife should go through a joint between vertebrae without much trouble. A small pocket knife should be able to handle it. If you are really worried about it a sawzall makes quick work cutting bone while processing animals. A battery powered one even goes in the field without needing a power supply.

Thanks....everyone for their posts, possible I might need a Meat Cleaver instead? Sawzaw seems cheap enough.

I agree with the SawzAll comment. Also, you might want to be careful eating the brains, lots of bad stuff can live in there. Namely BSE, otherwise known as mad-cow disease.

A big kukri would do or you can look for a small sword , Scrapyard has one right now and I think some bones will be no problem for that .

Wait so did you buy the pig or the cow? Or both? I'm just wondering about how you are going to prepare the meat. If you go with the cow you should check out some traditional barbacoa de cabeza recipes.

In ancient Rome, the greatest sacrifice was a suovetaurilia -- sus, pig and ovis, sheep, and taurus, bull -- all killed one after another to honor the gods and feed the priests! :D

My $25 Ontario Knife Company military machete hacks a deer head right off, once the bone is exposed. One swipe is all it took, but it would shave the hair off your arm before i did it. It did NOT dent the blade at all.

A large kukri or just use a boning knife to work in between the vertebrae.

Well there it is, OP, you need to find yourself a sheep before you carry this out.
Maybe I'll try this for my next big bbq :D

+1 I had a Mexican friend take me to an old school taqueria place in CA once. He ordered for both of us and I ended up eating a brain burrito. It was well seasoned and actually pretty good.

+1 a Nepalese Kukri, a real one not the machete style ones, its what it was made for. look at the Himalayan imports sub-forum here.

I'd go for a cheap carbon steel chopper. You could of course go for CPM-3V or INFI chopper, but unless this is a dish you'll be having frequently, I don't recommend committing that much money for something you'll only be using occasionally.

We use good ol' "Old Hickory's" for butchering, and a hatchet for seperating chops. Just get ther blade between the bones and the head will twist right off..Dosnt take much pressure at all..You can make souse with the head, the jaw meat is very, very good..
