Need A Knife for Pig/Cow Beheading(Something that will cu through bone like butter)

Any thinner profile blade will pop a joint, I used to do it daily after high school working a kill floor (cattle only)...going through bone when you can pop a joint is just silly and uncalled for, anyone with formal butcher training will know that and when you do cut a bone you usually use a band saw or in the field a bone saw.
 
10" blade, 1095 for $12-$14...you can get a 14" knife for a couple bucks more..

Wait so did you buy the pig or the cow? Or both? I'm just wondering about how you are going to prepare the meat. If you go with the cow you should check out some traditional barbacoa de cabeza recipes.

Cow, we're going to bleed it out, cook it like lamb over oak fire. We want to cut the head off though lol. Though, I guess even a folder would do it, am really anxious to try the cheek steaks.

Best folder for that? an #8 Opinel...it will rip through like a hot knife through butter.

I'd leave the head on, have a little head porridge ;)
 
We kept a big hacksaw just for cutting through bone . There was a guy down the road that just used an axe , I didnt like that idea because of the small bone fragment possibility.

The OP sounds suspiciously murder-y. I would say to go for a mid sized machete, and sharpen it nice and good, and swing hard. That would likely do the job.
