Recommendation? Need the lightest folding knife with a gut hook?

Not sure it’s what you’re looking for as it’s more for birds, but I’ve got an old Remington bullet knife (not sure the year, it’s USA made, delrin handles to look like stag, 80s is my guess) that has a gut hook and a choke tube wrench, cool little knife my dad gave me not too long ago! It’s super light and you might be able to snag one on eBay or something.
UMC R-1 Upland Bird knife probably. Not a gut hook though.
Remington did make this R-3 folding hunter with locking blade and locking gut hook with saw.

I'm no expert in that matter, but have you considered modding a blade to add a guthook?

It depend on where you carry it, but I think it could be maneagable.

I did this to one of my Leatherman’s, added a saw. So it’s definitely crossed my mind. I was hoping to avoid it!
 
This is hunting for Whitetail deer. You process them in the field and pack out the meat between 1-2-3-4 guys, depending upon where I happen to be that particular hunt and with whom. Just another reason why I don’t want to be hauling in a ton of stuff with me that’s unnecessary. With that said, packing out all that weight is the last thing on my mind for a hunt like this, once you have success you’re prepared to take all that extra weight out and happy to do it. Being fresh and surviving to that point is necessary though first.
But a couple of ounce on your hunting knife is critical? As for packing out a whitetail, where do you go that is 6 days off the trail to hunt those? I never had any problem packing out mine by my self those i've shot. P.S. I'm a bit older than you.

I don't know how long and big you need the knife to be, but a spyderco bug is 0,4. If you buy two and mod one to make a gut hook on it I think it could be worth it. Total less than 22g

Or you could have a folding guthook for less than 0,4 oz with let say a mini-bugout and together they would weight less than 2 ounces

I never skinned an animal before though, I don't know if would be too small.
 
Longer blades with swept points make the job easier...
... but you can skin a deer with a sharpened bottle opener: if you had to.
 
Is this where I mention that a friend of my Grampa's lost his knife while tracking a big buck?
He pounded a .348 Win case mouth shut, rubbed it "sharp" with the same rock, and gutted the deer with it.

Absolutely. I used a SAK once. It wasn't that difficult or too much of inconvenience when compared to a "proper" skinner.
