Nepali cuisine

No matter what anyone says about the USA-- there is nobody on earth I would rather be in charge, even with our faults we are the best of bad choices( being as all humans who have power will abuse said power and think themselves better than those who gave them the power ), the world would be a better place if we secured that nation, same as if we had secured all the others-- something about half measures comes to mind.-- I am with the general who thought we should just roll over everyone with nukes when we were the only one with the power , united states of the world sounds fine to me. :P; but I think things work out the way they must work out , don't really think it could have happened any other way when you consider all the things going on all over the world all the time.

basically the forest teaches me everything I need to know about the natural order of things; and it is brutal and unforgiving, not malicious , but always cruel, beautiful and terrible.

just a very intense bundle of truths in that man, glad you shared it ; both the good and the bad

You don't know how much I wish I could, Bookie. It's been a long time since I had any. I keep telling the wife we need to make some, but just haven't. I need to contact my friend about how his ex wife used to make it. That's stuff was superb.

Pork, Beef, Chicken, or fish Adobo is super easy.

Brown it first in a crockpot with some oil. Always same amount of soy to vinegar, and then double the water. (1/2 cup soy sauce, 1/2 cup vinegar, 2 cups water.) 2 - 3 bay leaves, minced garlic to taste ( around 3-6 cloves) Sometimes I just smack the cloves with a knife and toss it in...mincing is too much trouble, 1 tsp of fresh cracked pepper, 1 sliced onion red/yellow/or white, 1 bell pepper (any color). Bring to boil, Cook for about an hour at simmer. Don"t forget to make rice! Sometimes I like to use add balsamic vinegar ie....1/2 cup soy, 1/4 cup vinegar, 1/4 cup balsamic vinegar, 2 cup water), I usually use cane vinegar, but regular white vinegar is fine too.

Usually tastes best the next day.

Works wonders with BBQ leftovers!

Last week Lama Jegme came to visit us and we had a great time.
Kanchhi made Momo for Lama J. and he like the MoMo eat well and had a great visit with HI family.
Kanchhi and Chokpa are a great MoMo maker and other Nepali, Sherpa and Tibetan dish as well.

Tibetan food is very melow and Indian food is spicy but not as spicy as I cook.

Looks tasty! So it sounds like the first thing I'm going to get there is definitely going to be the momo.

I made a wonderful Indian chicken curry dish for supper last night. I love the way the house smells afterwards. Smells like...HOME!

One of the Tibetan/Nepalese staples I really enjoy is tsampa. Think of caffinated popcorn. Actually it's parched barley, ground to a powder and carried by travelers. Usually reconstituted with Tibetan tea, which is strong black tea with yak butter and salt added. Reconstituted tsampa makes a great traveler's meal with plenty of carbs and fat for energy, and I really like the taste too.

When I'm living the sedentary life I try to keep the carbs low, so it's probably for the best that I don't have a readily available source of tsampa.

Added in edit - just saw this video when I searched for tsampa. Very amusing and to the point by the Dali Lama.

Dang, I just finished eating and started reading this thread again and now my taste buds are crying out for the flavors of a nice spicy Kari or some dumplings of some sort :D Time to read the Cantina Recipe thread and decide on my conquest of dinner tonight. Unless hubby saves me by cooking something himself. He is a much better cook but going to be at work late tonight so think I will try to surprise him with something (hopefully) edible when he gets home.

And if it's not edible, you can tell him it's a delicacy/honor/good for the vigor.

ROFLMAO Good one Scara!!
:D :D :D

I can't tell jokes, but I'm told I'm pretty funny. Of course about half of the time they mean funny as in really friggin' weird, but hey, there's still the other half of the time.

Anybody have an idea what the "Bhootan" is on the menu? I assume it's related to Bhutan but I can't find any description on the internet.

...

A week rolled by and I gets this invite to go back to Chinh's place. Actually it was his Dad's place and he was the village chief. They were cooking a special supper for me because they liked me and was the first round eye they ever met. I was leery, but my platoon leader had already been informed via Nha Be's Naval Commander, that protocol demanded I show up since I was to represent the US of A. Got there, I did. At supper, we were sitting on the floor in a circle and was having some pretty good chicken somethin'er'uther. Chinh's littlest Sister had adopted me and was sitting next to me, helping me with my supper and holding my hand. Then, since I was the guest of honor, I was given a small covered dish which was for me to eat. I slowly opened the lid and a chicken head, sans feathers, was lookin' back at me. Through sign language, I understood that I was to crack the skull with my teeth and suck out the brain....gag....choke...almost puke..... Chinh's littlest Sister was watching with BIG eyes and so I knew it was a treat. Being the gentleman I am, kind and tender-hearted, too, I smiled at the little Sister and proceeded to raise that chicken head to my lips. She watched every tiny move I made and I could sense she would really like to have that fowl looking head. Her parents saw what she was doing and said something to her. Not happy. She lowered her head and looked down. Just as the chicken started to enter my mouth, I quickly lowered it and gave it to her. She squealed and CRACK, SUCK, and it were gone, baby! She was on Cloud Nine and being scolded by her Mom & Dad. Bless her. I placed my arm around her and gave her a little hug. That appeased her parents as they hadn't lost any face. She looked at me and I thought: "My savior". She was smiling. I was smiling. Great supper, let me tell you.

In the next week, our radio operator came running up. Had been searching for me. Mr. Bookout! Mr. Bookout! You gotta phone call, Sir! A phone call? Yessir! On the land line, Sir!...and it's a GIRL! WTF!! BIG TIME, too!! I ran to the radio shack and picked up the phone. When the conversation was over, I set the phone back on it's cradle and told the guys gathered around to witness this highly unusual event, that NEVER, EVER, would someone accept a phone call from that girl again!! Turns out it was Chinh's OLDEST Sister. She had fell in love with your's truly and wanted to get married and go to the land of the Big PX. Uh-uh. Nada. Ain't no way. Not gonna happen, G.I.
...

Bookie, you should have been a diplomat. Just about every culture places great value in their offspring, even if for practical reasons they can't afford them high status. (Cultures that don't probably don't survive very many generations.) Hard to go wrong by delighting the Chief's little daughter. It may be that heartwarming action that got you the marriage proposal, rather than dreams of the big PX.

...and all this time, Howard, it thought it t'were me unusually handsome countenance coupled to an extra-suave personality......

That's what I thought too. Although I did have to look up countenance.
