Shawn, my advice is to go and put your hands on whatever you are interested in before committing to it. Different opening systems, different locks, thicknesses, even appearance have all been important to every woman I've helped or bought knives for. If I pick it out without them it is likely to not get used and sits around in a drawer. I've gotten to the point I put a bunch of knives on the table and let her look to her hearts content and ask questions as needed. Not once have the woman chosen the same knife I have so I shut up unless asked. :)

I picked my fiancee up a Spyderco Delica folder and Mora Companion for camping/food prep use. She's really happy with both.
 
Here is a traditional (old-timey) Case mini-Toothpick (2 blades) and a modern Chris Reeve Mnandi in Box Elder wood. Mnandis are very popular and come in various woods, but are expensive. Men and women collect them and carry them. Both knives have blades smaller than 3".

Doug Ritter mini-grip
Full sized Griptilian with black sheepsfoot and sand scales.

She carries the Ritter more often than the others. She says it is easier to close than the Dragonfly and easier to carry than the full sized grip.

But she thinks the dragonfly is the prettiest (pic borrowed from seller's site).

If he truly loves you, he will get you a CRK Small Sebenza inlayed with your favorite wood or anodized with a beautiful and colorful unique graphic.
Or, he could try to talk me out of my purple Rat!

I got my gf a ka bar dozier mini hunter it's a great little knife aus8 steel easy maintain and is very inexpensive ,also got her pink mini champ Swiss Army knife for her keys

What is his budget? Can't go wrong with many of the options presented above. If I was picking for myself, I'd go for a Sebenza. Mucusta makes some beautiful knives also.

I bought a Spyderco Dragonfly for my wife. My daughter picked out a Benchmade Mini Griptilian for herself.

I had the challenge of hunting these two down a couple of years back. The wife loves the Spyderco Salsa but it HAD to be the green one only.... LoL
