no fingernails...which knives done require fingernails to open them?

You could also look into getting a knife pick to help you out. I know GEC has made some although I don't know if they sell them separate from knives. Waynorth had some he was sending out with one of his SFO's. Mike Latham (can't remember name here - knife swapper or something) has collectorknives(dot)com (he's a paying member here) I think has some although I think you had to buy a knife to get a pick. Kerry Hampton I think made some too but those will be rarer than hen's teeth.

A.G. Russell also sells a 'Steel Thumbnail' along those lines. Not very expensive either.

(I purposely keep my thumbnails at somewhat longer trim, thanks to my pocketknife habit... :D)

Back when my undiagnosed/untreated RA was so bad I couldn't open a conventional knife of any kind, I could still open this one.

Douk Douks are easily pinched open. Most of them don't have a nail nick for that reason, my beloved squirrel has a nail nick but I don't think its deep enough to use as such. The GEC 15 boys single clip bladed Boys knife is also a breeze to pinch open
 
One of the large Case dealers has some SFOs with an easy open notch in Antique Bone SS. Just Google for "Case EZ Open" and you'll find them pretty quick.

For some reason they have an EZ open version of the drop point Russlock, which is already: A, a one-hand opener, and B, easy to pinch open with that big drop point blade anyway. No idea what the logic was there.

Of the knives I had readily available to test with just now, the easiest to pinch open was a Case Copperlock, followed by a regular black Sod Buster Jr, then the bone-handled Sod Buster Jrs. Queen Country Cousin was pinchable but took a pretty good grip

No way I could pinch open my Peanut.

These EOs from GEC are good for folks with weak or really short nails. Notice a couple of them don't have nail nicks. Sorry for the fuzzy pic.
 
I think you should do something about that nail-biting habit......:D

Traditional lockback knives offer a very modest pull and can be a good option. EZ-Open knives may be governed by the spring, some GECs can be a tough open even with a notch - or maybe my left thumbnail has become immune to tough springs and I can open almost anything..??
 
I only have 2 nails- middle and index fingers of my right hand, just for opening knives.

I'll second that Case Mini Copperlock.
I have an amber bone one and although I'm an Old Schrade man through and through, I think the Copperlock is one of the most pleasing knives I own.
