No Membership Required---Let's See Your 121's

Your welcome. If you have difficulty procuring a Empress Trio Set. Take this knife and put a clean edge on it and let the wife use it in the
kitchen. She'll like it so much you won't get it back. DM

Looking back at the 121 examples posted here, it is evident that by the late 70's (1979) the flats had come way down and the knife became thicker. Expressing a stiffer blade and the grind line no longer a soft transition. DM

I guess I could thin down the later one I have to bring it closer to the early 70's 121. Plus, give it a little more roomy handle. I wish I could add a 1/2" to the blade as well. DM

I have more 121's than any other 100's. Well, don't have all models. Here is a comparison of some blades and hilts.

Here's the look of some handles.

Have 6 of them, three reside in the kitchen for serious food knives. Never go in dishwasher. Working on hunk of cow elk several years ago. Looks like she had a good summer.

Likely one of two in the safe. The last one goes hunting, well , went hunting.

300, the one with the inverted stamp has the highest flats/ grind line. Thus, it would perform better. Nice bunch of 121's. DM

David, you are correct. But, it stays in safe as the most valuable I have. The others are users, although they will out last me, that 440 is hard and stays sharp for kitchen use once you get the edge on them. I am not a butcher and likely will not process anything anymore where ease of use is necessary. IF, I were to shoot a deer it goes to backstrap steak, and no one cuss me, I just chunk up the rest, vac pack it, and when wanted grind it for burger, tacos or chili.....chili sounds good but its so bloomin' hot (humid). 300

300, You will always be a Wick Fowler chili man. Makes me hungry. I think I could cook it outdoors. DM

Max, what is the blade length on the one with scalers on the spine? DM
Sorry, David, just saw your question this morning. I will measure both later today dot and no dot. I know the no dot has been spa'd and pretty sure the dot as well.

Yes, you are correct.
And thanks for measuring those. I thought they looked longer than my 3 liner.
So, they were built shorter in the 70's than those in the 60's. DM
