You guys forgot the most-important accessory:

Jeff, Jeff, Jeff, you're too mono-beer-centric! You need variety in life my friend and this also translates into variety in the beer we consume. Now, given that all knifemakers are the do it yourself types, it's natural for me to have one of these setup's at home, and while technically, it's not in my shop, it is a few steps away in the house, and the glass mugs are transportable:

....a kegerator, with three of my own homebrews on tap ready for consumption at the end of the day.
