Lots of curly maple up here in the great white north. Burled maple is also gorgeous, if you can find it. Rarer than hen's teeth lately. Have you given any consideration to osage? One of the most stable woods, incredibly strong and resilient (used to be used for bows back in the day), with a "vintage" look to it I find incredibly appealing. Osage doesnt grow up here, sadly...
