If it absolutely had to be a folding knife, I'd choose a Strider AR or maybe the new Swamp Rat folder.
 
Hands down the Buck/Strider large spear point. Heavy duty to the max and you can get it scary sharp and it stays that way. Very heavy scales, liners and lock. Great all around blade shape too. keepem sharp
 
I like my Benchmade 630 if I am limited to only one folder. It isn't too heavy and it is as big as most fixed blades. The recurve blade will get a lot of work done and makes for a suitable weapon too :) In fact I had a friend say my 630 was too big and I compared it to his old Marbles. The blade of my 630 matched his well worn Expert almost perfectly.
 
Although I've never owned one, based on owners reports and the one I had a chance to examine, I'm going to opt for the large Sebenza as well.
 
Given that you've excluded the best choice - an SAK variant - I'd offer the following three options:

1) Dozier Folding Hunter
2) Chris Reeve Sebenza (probably large,but the small one is also a cutting machine)
3) Benchmade 806 D2
 
Spyderco Military - has been used and abused as such by me for a year or so now.
 
i have a plain edged emerson commander but im thinking about a Benchmade 630 or maybe a al mar sere
