Only 3

For the last three years I've carried the same S35VN fixed blade and 14C28N folder nearly every day. These alloys work well for me.
For big blades and chopping tools, 5160 will do nicely, but I'm not terribly picky.

That being said, none of the blades in The Bad-Assery, the seven fighting knives on the shelf above the monitor as I type this, are in
any of those steels! And most of my larger blades are 1095.
 
Magnacut?
I'm tempted to say Magnacut, but the future is unwritten. Who really knows what kind of madness is being cooked up now or in the future by material scientists. At some point, blades could have micro electric machine chainsaws doing the cutting for us that you'd better hope to god don't accidentally deploy in your pocket.
 
I know categories weren't asked for or required but I thought it would give a little context to my answer.

Budget = 14C28N
"Premium" = 20CV
Fixed blade for *general* camping/hiking = 80CrV2

I have no personal experience with 3V, Magnacut, Cruwear, Maxamet, or M4. I went with steel I own.
 
S45VN - For folders. I don’t have a ton of experience with it, but trust steel nerds that it’s a bit more stain resistant and holds a bit better edge than S35VN and that stuff totally works for me.
A2 - Partly for ease of field sharpening, partly because it’s what my favorite fixed blade maker uses.
3V - Kind of the opposite of A2, but sometimes I like a field knife that is tough and holds an edge.

I think that the steel Victorinox uses is very similar to 12c27, so I would say it's close enough to count as the same steel
 
nitrobe 77, magnacut and maxamet

A steel that's extremely easy to sharpen, a steel that is excellent in terms of overall balance (toughness, sharpenability, corrosion resistance, edge stability and wear resistance), and a steel that sacrifices everything else for high hardness and extreme edge holding.
 
M390, or any of its equivalents (e.g. CPM-20CV, CTS-204P)
S35VN
H1, or any of the other ultra-corrosion-resistant steels (e.g. Vanax SuperClean, LC200N)

One for edge retention and EDC, one for all-around balanced performance, and one for the rain. :)
 
Not happenin'. I'd have to give up several knives I'm rather fond of.
My current carry has 6 or 7 different steels. I don't know if Victorinox, and MAM use the same stainless steel. Nor do I know if the Weidmannsheil lockback and my Mora Number 1 have the same carbon steel. My LM has both S30V and 420HC blades.
