i show this for sale, Böhler K720 carbon steel, flat grinding
2.5 mm thickness (.098"), 127 mm blade (5") and 232 mm (around 9") overall length.
Scales of brown micarta.

Ah, usually my kitchen knives cone with wooden saya.

I'm very interested, any close up pictures of blade? It looks polished but I'm not sure
 
Sorry by my description, is not polish, is finish at 400 grit in horizontally lines, later up a close pics, thank
 
I’m looking at the angle of the edge, in relationship to the angle of the back and the grip. That’s basically a triangle shape. It looks like you end up gripping the knife with your hand at a descending angle.

I’d be reluctant to buy the thing unless I could try it in hand. Or at least…show a side-on picture with the cutting edge flat against a cutting board. That way we can fairly judge the grip angle, as the knife will be used.

Edit: Oops! I missed that this is a pairing knife. In that case, the handle angle is less important.

Close up pic, the micro bevel is finish at 3M Trizac A16 (1400) , of course that a good chef can mirror polish by hand with appropiate stones

Performance is great.

Highly reactive though, but I'm fairly used to high carbon.

As for kitchen use, the angled tip is great for chopping and slicing.

I did mirror polish flat grind edge on it, probably 20 degrees inclusive. Bites hard.

Later I will show patina that built up.

It needs a cleaning haha. I've been lazy and haven't gave it a vinegar bath to prevent uneven patina.
