I was trying to find out what steel they used in that knife, Neko.
It is a nice piece, and the company is still in operation. They run their kitchen knives in the 59-61hrc range, and use a carbon, molybdenum, vanadium alloy.
Sounds like it will take a Nice edge and hold it well, especially if the Mo and Vn were used for carbide formation.
