perfect chopping board HI kitchen knives

I'll try to get it done one day.

The set is much too big for my kitchen right now, so it's currently in storage.

We are saving it for when we do the house remodel in the next couple years, Adding a second floor, and expanding the house footprint another 400 sq. ft. Of course, the wife wants a bigger, better, kitchen. I figured the big arse chopping block and knife, can go next to the special wok burner that we'll be installing and having custom made.
 
Apparently there are only a few of these craftsmen left in HK. I sure would like to find a place to get one. I have a huge pine tree rotting away in the yard but its too big to get my saw through. Its about 36" diameter but I have a bunch of other logs piled up on top and around it so I cant get to it without a tractor or something. I already cut 75% through it. Maybe Ill go try again. Hopefully there will still be some core left. If so I should be able to make about ten of them or more? Yall got me inspired now. Might try it again this weekend?
Cool videos. I go to this Chinese restaurant about once a week and they serve duck cut the same way they did that chicken in the video. Hard to beat roast duck!
Cul: I like the wok idea too. I want to do the same as a permanent part of the kitchen. I also will have a brick oven for bread, pizza, etc. I live to eat where most eat to live:thumbup:

Basically it'll be an inset double ring burner, so that the wok sits in the fire, not on top of it. About 36K - 40K BTU (approx 18 - 22K BTU / ring)

A buddy of mine has one, and I want one just like it.

Absolutely! Nothing bigger than 20" ak on the chopping block tho! Wouldnt want to split it.
Blue: I just ordered a 16" ironwood block:thumbup: Awesome looking! Cant wait to get it! The ironwood is good for general chopping and the pine they say is best for fish because it is softer. Thats understandable since my fish knives have very thin edges.

Here's a Tako Hiki (sashimi-octopus) knife im working on now. Its made from a file and will need a pine block.

Cul: Here is a crawdad burner I built for a friend. Its made from a cast iron canning stand from over 100 years ago. Top grating is CNC cut from stainless steel plate. It can boil 10 gallons of water in just a few minutes. Min will be the same as this one but with a larger burner and a whole cut out in the middle of the grate for wok cooking. Ill also add a short windscreen on top for beach cooking and a box underneath the burner to keep things warm while cooking. Im still collecting parts for it tho.

That is cool. Not quite sure where'd put it in the kitchen though. We're having Viking do a custom to match the stove and other appliances.
 
Wow, $12 for a large iron wood cutting board like that is a great deal! Unfortunately, I don't know of any Chinese supermarkets around here that have any cutting boards like that, or that cheap. I've wondered how much difference having the wood grain oriented that way affects knife edges. They must use really dense wood if it doesn't absorb water or hold bacteria in.
And your sure it is ironwood?? I thought it was kind of expensive.
 
Dang that is one industrial strength marshmellow roaster there. I'm surprised your still so infacturated with fire, one would think that would be a sore subject for ya. Almost like the thought of having to wear shoes or something.

Almost all the "ethnic" supermarkets around here are Korean and they only have plastic boards. We have one Chinese supermarket called good fortune and they had two kinds of round cutting boards. One was side grain, no idea what it was made of , and one end grain one. The label was all in Chinese so I brought it to a guy who worked in their butcher department and asked him what it was made of, and he told me ironwood. Does anyone here read Chinese? I can post a picture. I can say it looks like ironwood and its as heavy as a breezeblock .

Can't help ya on the chinese reading neither, I'm feeling pretty dumb and useless right about now.

In my encounters compared to other woods the ironwood isn't high on the expensive list, I haven't bought any in a long time though and most of what I got was given to me or scrap. Nothing near large enough for a cutting board.

Still that's an incredible price for any kind of wood really. No much profit for labor in that.
 
There are some websites that sell a gen-u-wine 12 inch ironwood cutting boards for $27. So $12 is much cheaper but not unbelievably cheaper

If I was in insurance which of course I'm not and never will be I'd cancel you in a heartbeat.

I looked up ironwood and the "official" translation I got is not what the picture showed though.

12 bucks for the board and 152.95 to ship it! Ironwood is heavy.
 
Those sneaky Chinese raised the price to nearly $14!!!

I paid $120 for mine shipped but I got the giant ironwood one. Its 16" x 4" and probably 20#? That one's going on my rolling island for the kitchen. Im going to have to whack off about 6" off my island so my wife can reach it now.
Im thinking it would look good with a brass or copper band staked around it.
 
Mine is pine, about 6" thick, round, slightly concaved, with a matching butcher knife to boot.

Basically the knife hasn't been separated from that chopping block, in over 50 years. The knife blade edge is the exact same convex shape to the boards concave curvature. The knife is so sharp, it cuts through anything with cooked bones as easy as butter, such as a chicken, duck, pork ribs, etc...

This knife and block set came from an old Chinese restaurant in Chinatown, that closed down, and belonged to a friend of my grandfathers. He got the set many a moon ago, and when he died, grandma gave it to me, since I liked to cook traditional Chinese food.

Cul that isn't the one that used to be in the middle of that restaurant kitchen that we talked about a while back? Man what a GREAT board and if that is the cleaver I remember that is incredible too. Would LOVE to see a picture of that old one! I still miss that place.
