Phoenix - ongoing review

Beautiful blade. Excellent work. Really nice set up. Thanks for the pics and review. Can't wait to see more usage.
 
Thanks, Zen. It is getting some kitchen use too, just need to grab the camera. My son has his eye on it, he loves the feel and balance. I may order each of my sons one eventually and I'm considering one with full size handle and shorter blade.

Yes mqqn, I agree. I own more JK knives than any other maker. John makes products that are rugged and affordable, with a simple look that says "tool". Not some fancy thing that breaks or chips, no something that tries to be an everything-but-the-kitchen-sink, just hardworking tools that will outlive me, for sure. Good stuff!

Well, my friend, go ahead. You are making people here happy with your products, so keep it up. I really like the knife you made from my design and many of the others too (ewok especially).

The victim tonight? Tuna steak, orange pepper, red onion, olive oil, and balsamic vinegar. OMG it was delicious. And my trusty JK was part of the prep. Mmmmmmm. I need a better camera though.... It looks WAAAAAY better than these crummy pics show.

You read my mind on the asparagus - I picked up a bunch yesterday and plan on grilling it up tomorrow (asparagus is VERY good on the grill if you season it and roll it in a little olive oil....)

I love the way the Phoenix Looks, but I want to know what advantage if any do you gain by sloping the top portion of the blade toward the point more than other designs. Great looking knife, i am glad it performs as well as it looks, great design!

Only advantage is that is my end point to choke up if I grasp the blade for scraping. Otherwise it is just an artistic flair, nothing more. Thanks for the compliment! I sharpened it on my waterstones the other day, and mmmm it cuts like a dream. I don't care about shaving sharp, I like a tough edge that doesn't need to be babied. :thumbup:
 
Bumping an old thread. Last night I held this knife and announced aloud, "Other than a saw or axe, I don't really NEED another knife since I have this one". It's almost blasphemy to say on a knife maker's page, but you made a great knife that's still sharp and beautiful, John. Thanks!
 
Whoa! I was on FB this morning and one of those memory pictures popped up, it was a Phoenix! Maybe I'm being subconsciously told to make one?

Maybe! The curves of my handle are perfect. One in ironwood with blue liners would be nice...if only I had the money!
