The Bird and Trout looks like it would fit the bill.
Horsewright has some great 3" fixed blades, so many great designs & look extremely dialed in for any task with great sheath options
(he might be in the higher range, but if doing 200 ynot 3? ; )

anyway, just making the point that many makers will have small 3" fixed ... so many designs
personally, I keep leaning towards the ultra simple puuko styles, but yeah, a puuko with a wharn like shown earlier is really useful also (& always a sucker for ultra simple lines)

Thanks guys for the shout out! 2-3" blades is about 90 percent of what I do. I work in two main steels AEB-L (62to 63RC) and 26C3 (63-64RC).+1 also for Horsewright knives, maybe a little over your budget, but solid working and beautiful lines on proven users on his ranch and other fellow cowpokes.I finally snagged a Sonoran belt knife in rams horn and have not used it yet because it is too pretty.
