The top one is actually more pinkish than orange... Chambriard Farmers knife... very inexpensive with only four parts to it. The second is a Le Sabot Lagioule knife.

Same friend wanted a stainless and wet resistant knife to go canoeing with, and this is what I put together. 12C27 stainless, hidden tang and a sandwiched handle.
Finished out with a bit of hi-viz Kydex for good measure, screwed together so it can be disassembled for cleaning.
