How did that much discoloration happen? I've seen the same with a heavy used Opinel Cr. What steel is it?

It's called patina. It happens to non stainless steel blades. I'd hazard a guess that that patina is from cutting apples. Patina on my Super Blue Caly.

Charlie is right. I love to eat apples and my Caly 3.5 has been my go to apple knife. The Super Blue steel is not stainless and will develop a patina quick. Apple juice seems to give a nice blue effect. I really like it.
